What to cook this week.

Pan Con Tomate

This simple recipe is extremely satisfying after a long day on the bike. Salty and filling, it works well as a snack, appetizer, tapa or side dish to a meal. A favorite snack of our kids when we lived in Girona was Pan Con Tomate (in Catalan it's Pa amb Tomaquet!) topped with some dark chocolate. Ingredients:
  • 3 toasted slices of bread
  • 2 gloves of garlic (optional)
  • 2 mature tomatoes
  • Olive oil
  • Sea salt
Rub the garlic on the toast, then cut open and rub the tomatoes on the bread, drizzle with olive oil and sprinkle sea salt on top.
