Chef Chris. Mathias’ has spent a most of the winter cooking and cycling in Northern Italy.  He recently shared this light, healthy Tiramisu recipe.

Ingredients:

  • 250g mascarpone
  • 125g full fat Greek yogurt
  • 3 tbsp sugar
  • 250 ml 35% whipping cream
  • 1 tbsp sugar
  • 2 egg whites
  • 1 tbsp sugar
  • 4 shots of espresso
  • Lady finger biscuits
  • 75g 70% chocolat
  • 10cl 35% cream .
Directions:
  • Mix mascarpone,  yogurt and 3 Tbsp. sugar leave until  sugar is nicely combined.
  • Whip cream and 1 Tbsp. sugar and place in fridge.
  • Whip egg whites and 1 Tbsp. sugar.
  • Slowly combine whipped cream into cheese mixture followed by the whipped egg white.
  • Lightly soak the lady fingers in the espresso and place on bottom of dish.  Cover with half of the cream cheese egg mixture. Repeat.
  • Over a double boiler gently melt chocolate with cream when melted drizzle over top. Place in fridge for at least 1 hr .
  • Will last for 2 days in the fridge.
